Sesame Noodles

8 oz whole wheat spaghetti
1 tablespoon peanut oil
2 cloves garlic minced
½ teaspoon red pepper flakes (optional) or to taste
2 tablespoons tahini
1/3 cup peanut butter (I prefer chunky)
1 tablespoon honey (optional)
5-7 tablespoons hot water (starchy pasta water works well.
Salt and pepper to taste

  1. Cook spaghetti according to package directions
  2. Heat oil and saute garlic and pepper flakes for 1-2 minutes (don’t burn)
  3. Mix in tahini and peanut butter and whisk in warm water until sauce is a creamy consistency
  4. Add salt and pepper to taste and more pepper flakes if desired
  5. Toss with pasta and serve warm or cold. A great vegetarian/vegan side dish
